52 Weeks of Pinspiration {Week 28}–Mac & Cheese

Welcome to week 28 of my Pinspiration series!

It usually happens about this time of year.  I am sick of cooking.  Sick of grilling.  I don’t want another piece of BBQ chicken or ribs.  I don’t think I could choke down one more ear of grilled corn.  Nothing sounds good.

So last week one night, feeling completely uninspired, I looked at my family and I asked the age-old question, “What sounds good for dinner?”  Without skipping a beat, my delightful daughter turned her laptop around and said, “Make this!!” pointing to one of her recent Pins.

You see my delightful daughter has been pinning recipes to make when she and her roommates move into their apartment.  Next month.

{Yes, I am just going to gloss over that little nugget for time being.  Not sure if I’m emotionally ready to discuss this. LOL Winking smile}

Anyway, since my dinner mojo was on hiatus, I said “Sure.  What the hell.”

First of all I need to tell you that Macaroni and Cheese is sacred food around here.  Not to toot my own horn, but I make a pretty mean mac & cheese – the baked kind.  Only problem is that I was A) not interested in taking out a second mortgage for the cheese required to make it and B) not interested in heating up the kitchen with the oven. 

{I should also tell you that we do, on occasion, enjoy the blue box variety as well.  Just keeping in real.  Smile}

But the deal with this particular recipe is its “revolutionary” stovetop cooking method.  Which seemed like a perfect solution to my summer’d out, mojo’d out dilemma.  So I followed Stephanie’s directions pretty much to the letter and it turned out quite creamy as promised.  And it had a nice cheddar flavor.

My only complaint about this recipe is time spent standing over the stove stirring.  Constantly.  But overall it was hit and I would recommend it to anyone out there who wants a stovetop, weeknight mac & cheese that doesn’t come out of a box.  Smile
