And lunch the next day. And dinner the next night. And the next night….
The thing about green beans is that when they are ready to harvest, they are ALL ready to harvest. So for the past week or so, every night after dinner I head out to my garden and pick green beans. Because Lord knows two bushes of green wasn’t enough. No! I had to plant six regular, bush beans and two towering vines of pole beans! It’s hard to believe that what started out as this…
now looks like this!
I’m thinking this is what Jack saw in his backyard!
Raise your hand if you just said “Fee-fi-fo-fum!” {Raising hand.}
Anyway, my good friend Ann, who spent the better part of her youth picking green beans in her parent’s garden, told me that beans freeze really well. So I did as she instructed and first par-boiled my cleaned and snapped beans and then froze them in a single layer on a sheet pan. Finally I just threw them in some quart-size, zip-top freezer bags.
And now we’ll be able to have home-grown, green beans all year long!
Take that Green Giant!
Peace, Kelly
